Stella Dimoko Korkus Bread Don Land Ooh.



SDK Bread don land oooh........




Ingredients:
8 cups of flour
1 - 2 cups of sugar
4 tablespoons of active dry yeast
2 large eggs
1 cup melted butter (or olive oil)
3 cups of warm water or warm milk
1 level tablespoon of salt
1 tablespoon vanilla extract (optional)



Procedure:
1) Sift the flour into a clean bowl and add the salt, sugar and yeast. Mix together. Whisk the eggs in another separate bowl, melt your butter and allow to cool (don't allow it boil).

2) Make a well in the middle of the flour and add the remaining ingredients.

3) Mix well and form into a ball of dough. If dough is a little sticky, add a little more flour and knead for up to 3minutes.



4) Oil your bowl by brushing with vegetable oil or butter. Place the well kneaded bread dough in the middle of the bowl.

5) Let dough stay undisturbed for 2hrs or untill it triples in size.

6) Gently deflate dough by pressing the centre.

7) Sprinkle little flour on your work surface and transfer the dough to the work surface. Also grease your baking pans.






8) Shape dough into desired shapes and place into your greased pans.

9) Leave dough undisturbed for up to 1hr 30mins or till dough rises  above the pans. Preheat your oven 20minutes before baking.

10) Bake your cake for 30 - 40minutes or till cake surface turns brown. 






*patiently allow the bread to cool inside the pan.

    11. Pancakes My favourite....
      Cup of flour...
      1 egg
      Pinch of salt
      A table spoon of sugar... I don't use sugar cos I either use honey or maple syrup to eat it...
      Milk...
      Mix milk and egg together before pouring into the dry ingredients to get a smooth consistency....
      The batter should not be very thick so it can coat the pan well...also make sure no lumps when you mix...
      Put a pan on fire prefarably non stick and coat lightly with oil of your choice..... I use butter when I want to do sweet mouth... You don't need plenty oil oh, just a little.... Pour batter in the pan and coat the surface...when it starts to bubble slightly turn over and cook other side....u sef go dey look am well make e no burn oh....
      Lol... Sorry no pictures but give a try and see.. U get better as u make more pancakes...

      Hello Stellalicious Stellite. Thanks for taking your time through this. This is the first time I'm seeing this "do it yourself" kitchen lesson on SDK. This will be great for me to try out. I am a bachelor and I have been looking forward to eating groundnut soup since I left home years ago. I am from that part of Edo state where they DO groundnut soup. You could get it from some Igbo restaurant in that location too. Since I left home, I haven't had any opportunity of eating the soup. The idea of making it myself stuck my head at some point in time but have not been bold enough to... The truth is; I do not know how to go about making the soup. The only video of this I saw on youtube wasn't detailed. Anybody from this noble SDK family wanna help?!

    5. @jealous skder, here is how to make gnut soup. u need. roasted gunt. crayfish. bitterleaf. knorr. palmoil. salt. meat or fish.
      pour ur already blended gunt in a bowl n pour lil oil into in and mix.
      put a pot on d fire pour water into d pot not too much guage with yr eye.
      put in ur blended crayfish, already boiled meat or fish, pepper,salt,knorr etc.
      cover the pot and allow to boil.
      then add ur already washed bitterleaf allow to boil then pour the gnut into it.
      stir and taste for sweetness and add whateva needs adding. ur soup is ready.

  8. Wow! Thanks for posting this Stella. I am more of a pancake fan but i will definitely try this out. Please is this the same process with wheat bread too? I guess the flour would just be wheat flour or is there any other additional ingredient?

    I have 2 questions to ask Cynthia.
    1) Item 10 made mention of cake, isn't it suppose to be bread? Or is that how its called when its still in work-in-progress?
    2) You said after putting the dough in the baking pan, you'll leave it for another 1hr 30mins for it to rise b4 baking in d oven. Why is it so since you'll already allowed the dough to stay in d bowl undisturbed for 2hrs.

    1. No 10 is an error. I meant to write bread not cake. You know i deal with cakes mostly.
      Your 2nd question, the long rising times is to allow for longer period of fermentation thereby allowing the yeast to feed more. The longer the rising time, the better the crumbs, the finer the bread texture and the more flavorful your bread will be. Just ensure you deflate dough in between rising times.

Poster you omitted the milling stage of your bread cos thats what makes your bread to be very smooth. I know getting a milling machine is very expensive, So you can take your bread to a bakery and they can mill it for you with no or minimum amount, then you will see a clear difference when you finish molding and baking.     1. Omoiya, this is 2014 o. I once saw someone do it sha. Get neat sharp sand in a pot,light your gas and let sand be hot. place your pan with the batter in it and cover pot with lid. The challenge here I think is knowing the right temperature for the sand. Just make sure the heat isn't too high. You should get it right after a few tries depending on how observant you are.

    2. Yes. You totally can.
      Get a very big pot biggerbthan your baking pan. Place 3 or 4 empty milk tins inside. Place pot on fire and adjust gas to medium or low. Once pot is very hot, place your pan containing cake batter, bread dough, meatpie or whatever you want to bake on top ofvthe milk tins.
      Then get a news paper, cover the pot first with the newspaper then fix in lid of pot. If there are open spaces between the pot and lit, place a heavy stone or something that the heat from the pot won't ruin.

      Bake your goodies.

Welldone stella, Good work poster your bread looks very good. but one step was omitted which is the milling stage, getting a milling machine is very expensive but you can take your fixed flour to a bakery and they can mill it for you with no or little amount depending on your negotiating power. When you try milling after mixing you will see how smooth your bread will be when you finish baking. Good luck.

  78. One thing I hate about Nigerian bread is that they don't like exploring, please you seem to bake well, try baking with coconut, chocolate, dry fruits, cheese etc instead of our normal breads.
