Meanwhile who has the original recipe for Ofada stew?The one that remains red and not turn black oh...Ok i heard i must put in that black thing that smells like 'Rotten paent''...I know it and it tastes delicious but i dont know where to get it and would like to know how i can do a red ofada stew same taste.....Abeg I need step by step guide cos i am not the best cook.....Hehehehehe

      But if you want the red color, you will use ripe tomatoes and scotch bonnet (sta rodo) and don't bleach your palm oil.

    7. Ofada is very easy to make.
      The red colour can be obtained by using those chili peppers that aren't very hot but red. And adding some tatashe. Then it's 'locust beans' or 'dawadawa' or 'iru' that you're calling that smelling thing. Lol. Remember to add crayfish. Don't blend the tomatoes, tatashe and pepper for too long.
      Then use palm oil not veg oil and dry fish too. Locust beans and crayfish are the secret.
      Sorry I don't have a step-by-step menu. But any good cook should be able to figure things out with these ingredients. Oh! Don't forget shaki, liver, ipomoea and intestine things all diced up into tiny bits. You can use goat meat with skin too. And our native seasoning cubes (not those oyibo ones) prepare the meat stock with motto much water.

    1. Keke fia is easy! Get unripe plantain cut it into cubes..add onion, salt,maggi, when is almost cooked add ur prawn fresh Peper or dry, dry fish,and palmoil allow to cook when is very cooked and soft add your saint leave! Serve hot with one orobo lol winks

    1. Recipe for ofada.
      Habernero pepper lots of it. Not totally red and not totally green.
      Shombo I don't know the English name.
      Tatashi not totally red not totally green.
      4 piece of tomatoes or more depending on the quantity of stew u want.
      Since ur not in Nigeria I Dont know if they have Iru there ( locust beans)
      Red oil.
      Seasonings
      Crayfish.
      Dry fish
      Prawn
      Cow tail.

    2. Blend ur pepper dnt let it be smooth! Heat ur palmoil alittle add onion and ur Peper and ur ingredients! Good to go...the ofada rice makes the difference no biggy

    3. To make ofada stew you will need

      1 cup of palm oil
      6 pieces of green bell pepper (tatashe)
      3 pieces of ata rodo
      2 wraps of iru
      3 cups or more of chopped assorted meats
      Seasoning cubes *I like knorr*
      Salt
      1 large onion
      Grounded crayfish

      How to prepare.

      1. Boil the green pepper and ata rodo till it reduces and becomes thick.

      2. While the pepper is boiling, cover the pot and bleach the palm oil for 10mins till it had blackened, turn off the heat and leave it undisturbed to cool.

      3. Put the pot on heat and add chopped onions and iru fry till its soft.

      4. Add the meats stir it and let it fry.

      5. Add boil pepper and let it fry till oil floats to the top, add little beef stock (omi eran) add Seasoning to taste.

      6. Add ground crayfish, stir and let the crayfish cook and combine with the stew. Lower the heat and let the stew gently fry till it releases the oil back again. Then your ofada stew is ready, I hope I tried..

    So u fancy the stew too right? I tried it once and didn't get it right so I commented about it in IHN some days ago and got wonderful responses. I will be trying it soon again and I am sure I will get it this time around.

    That's aw I went to one naming ceremony like Dat and was expecting to be served almighty jollof rice, only for them to bring yeye ofada rice that I can never eat.

    I carry my empty belle go home like Dat.

  12. Get dry ijebu garri. Pour into a big cup. Add as much milk as u want. Add sugar or honey to taste. Mix with chilled water.
    Note: u may garnish with roasted groundnut or kulikuli.
    Have a nice meal.

  14. Scotch egg recipe
    Ingredients
    Eggs
    Sausage
    Bread crumbs
    Salt
    Pepper
    Vegetable oil
    Flour
    Procedure
    1, boil your eggs ( hard boiled )
    2. Peel the back.
    3. Grate ur sausage or u can use the shop rite sausage preferably cos it's easy to flatten and mould.
    4. Use the sausage and cover the boiled eggs and put in the fridge for an Hour or two.
    5.beat raw eggs in a bowl, mix ur flour with salt and pepper. Dip the eggs coated with sausage in the flour,,make sure it's even. The dip the eggs into the raw egg and then coat it with the bread crumbs and back into the raw egg.
    6. Fry or bake on a low heat.
    Your Scotch eggs are read best enjoyed with fresh fruit juice.

    1. I am not a pro but this is how I make mine...
      Ingredients...
      Flour...
      Butter..
      Salt...
      Baking powder...
      Milk...
      Egg...
      Meat(minced)...
      Seasoning eg Knorr,curry powder,nutmeg and what ever spice you like for making the sauce...
      Irish potatoes...
      Green pepper and carrot if you like...

      Preparation...
      Prepare sauce for the meatpie..I like adding small tomato sha,seasoning,Irish potatoes,salt,minced meat,onion,green pepper and carrot...

      Sieve flour and baking powder...
      Add 2 pinches of salt and grated nutmeg...
      Add the butter or margarine and rub in until mixture is crispy...
      Make a hole in the centre of the mixture,pour in the beaten egg...
      Mix very well and knead till the mixture becomes smooth and free from stickiness....
      Cut into desired shapes and put the sauce in each pastry and seal the edges....
      Rub your egg on it and place it on a greased baking tray and bake in a moderate oven till golden brown...

  25. Recipe for akidi and abacha. Akidi abacha Palm oil Crayfish Pepper Maggi Onions Salt Cook your akidi till is done and soft; add salt when is almost done. soak your abacha in a warm water to soft and pour in a sieve for the water to drain. Put a reasonable amount of palm oil in a dry pot and steam for 1minute; add your sliced onions, granded pepper and crayfish, maggi and salt to taste. Please do not fry. Pour the akidi and abacha and turn with a wooden stick. Keep on fire for 2minutes and serve hot. Chi Austin.

    as another BV said. Ofada stew is not red. it is always black. If you want yours to be red. use red pepper and follow the same process. you need that smelly thing o. my sister that lives in amsterdam uses chinese black bean paste. it is fermented too and smells like iru.

  32. Ingredients 
    - 2 to 3 Eggs
    - 3 tablespoon chopped Onions
    - 2 tablespoon chopped Green bell peppers
    - 2 tablespoon chopped Tomatoes
    -  Chili pepper to taste
    - 1 small seasoning cube
    - 2 tablespoonful Vegetable 0il or melted Butter

    Hint: 
    - You can add salt to taste, but if your seasoning cube is salty, you can leave it out.
    - You can also add cooked ground chicken, boiled mushrooms, cheese , sausage meat and the likes.
    Preparation

    1. Wash and chop the onions, green bell peppers and tomatoes and set aside.

    2. Break the eggs into a small bowl; crush and add the seasoning cube, 1 tablespoon of vegetable oil or melted butter, chili pepper to taste and whisk thoroughly until fluffy.
    Then add the chopped vegetables(onions, peppers and tomatoes) and also mix well.

    3.Grease the Sandwich maker(sandwich toaster) with a little oil/butter and heat it up for 3 minutes. 
    Then scoop in the egg mixture into the Sandwich maker wells(holes). Close the  Sandwich maker and let it cook for 2 minutes.

    4. Carefully lift up the cooked frittata
     the Sandwich maker wells.

    U use a skewer to lift up the sides, this prevents it from breaking and also gives you the perfect triangle shape.
