Breakfast And Lunch Post


Today's breakfast inspiration is unripe plantain porridge.




Unripe plantain is really healthy and nutritious; It is high in fibre but low in fat and salt, which makes it great for those on a diet. It also contains Vitamin B6 which helps in the production of red blood cells, vitamin C which is great for the skin, vitamin A for good eye sight and minerals like calcium and potassium among others.


But let's face it, unripe plantain is boring! So, the best way to get these amazing nutritional benefits, is to try to convert the boring ol' unripe plantain into something interesting that you can enjoy. And this porridge is as interesting as it gets - delicious, spicy and packed full of flavour.

To prepare, you will need: Unripe plantains, smoked fish (mackerel or any other oily fish), periwinkles, crayfish, fluted pumpkin (ugu) or scent leaves, onions, chillies, palm oil, seasoning cubes and salt. You can throw in some semi-ripe plantains for added sweetness if you so desire. One great thing about this dish is that it can also be enjoyed at any other time of the day, not just in the morning.

And for lunch, how about some Nigerian fried rice, salad and fried turkey wings?

  6. I made this unripe plantain last night,yummy ��
    Your right chi,it was boring and my kids hated it till a friend told me to add semi ripened plantain to it and bam!!!!, my kids loved it. I used dried fish and lots of grinded crayfish for mine ✔✔✔

    1. Great! Kids love sweet things so adding semi-ripe plantains does the trick.

      And you're right about the crayfish too.. I add loads of crayfish to mine... Really nice.
