Hailings....
How is everyone? My weekend, weekended so well eh....Saturday was public holiday here so the fun started on Friday!......I only ate Joghurt and strawberry yesterday cos i had a little too much to eat the other days...Hmmmmm i am still on diet ooooooooooooo....
So when a soup has gone bad, is there a way to rescue it or you just throw it away? Those days when i was just learning how to cook some Naija food that my Dad taught me, I noticed that food always spoilt before the next morning..happened all the time and till today i dunno what i was doing wrong....It gave me phobia cos i have Naija food that's not in the fridge i would be expecting it to go rotten and sometimes i still throw away imagining its bad.
I am tired of doing cookathon so today and one more and we round it up....
I am looking at what to cook for Christmas time, before or after it...Any kind of dish is welcome since i am not the only one saving recipes......What Christmas dish would you suggest? Tell us the ingredients and how to cook it......I would be putting full stuffed chicken in the oven...Will stuff it with fried bulgur wheat...hehehehehehehehehe sense wee nor kee me.
So lets cook........If you like drop yeye thing and be expecting to be picked oh............
So lets go...
Enjoy the rest of your day

NOTORIOUS FOR JESUS
THE 250K ALERT THAT TESTED MY FAITH
In 2023, I received a miscredited alert of ₦250,000 in my account.
I didn’t know who sent it, but honestly, I needed that money. Oh, how I needed it!
I giggled, smiled, and knelt down to thank the Lord.
Quickly, I called my husband and told him about the “miracle alert.”
“Are you expecting any alert?” he asked.
“No, Sir,” I replied reluctantly.
“Then it’s not your money. Wait for the owner and be prepared to return it,” he said firmly.
“Eni pe Sir,” I mumbled, “I’m not a thief o! I was sent this money; I didn’t ask for it.”
But he had made his point, and he expected me to comply.
That night, I tossed and turned in bed, thinking, Can’t God bless someone without them asking?
The next day, a bank official called.
He said it was a miscredit and that the real owner was in the banking hall, asking if I could please return it.
“You don’t need to worry,” I told him. “I definitely will, it’s not mine.”
I took the account details and made the transfer.
Just as I dropped my phone on the dining table, a notification came in again, another alert!
It was ₦5,000.
The sender’s note read:
“Thank you for your honesty.”
I smiled. I was happy, not because of the ₦5,000, but because of the peace that filled my heart.
Till today, the peace I feel whenever I remember that story is unrivaled.

WHY MOST NIGERIAN BUSINESSES DO NOT OUTLIVE THE OWNERS.
In developed countries, we have businesses that have spanned over twenty generations.
R J Balson and sons, a Dorset based butcher shop was established in 1515 and has spanned over twentysix generations while Shirley plantation, a tobacco farm in Virginia was established in 1615 and it has spanned about 12 generations. Why don't we have such in Nigeria? Where are our Gbomoros? Our Biode Phamaceuticals, our Benue Cement Companies, Our FEDNAT group of companies, Our Abiola farms, etc?
The noncontinuity may be attributable to different reasons, some of which i would highlight below.
1. Poor or non existing Succession Planning: Many family-owned businesses do not engage in succession planning. They are not deliberate in identifying, molding, and mentoring successors. This definitely results in poor or non-existent succession planning,
leading to collapse when they pass on or retire.
2. Prefering to be a big fish in a puddle than a small fish in an ocean: Unfortunately, most Nigerian entrepreneurs of yore prefer to be the sole owner and there is always the reluctance among founders to go public. They abhor shared ownership, and this limits intellectual contributions to the development of the businesses, and external investments are also very limited, which may inhibit continuity.
3. HEAVY RELIANCE ON THE OWNER:
Most Nigerian family owned businesses are heavily reliant on the owner's personal relationships, skills, or charisma, making it practically impossible without the owner.
4.. Inadequate Governance Structure: Weak governance structures and lack of clear policies or continuity of vision affect continuity.
5.. Limited Access to Capital: Difficulty in accessing capital and credit can affect growth and make it hard for businesses to survive beyond the owner's tenure.
6 Regulatory Challenges: Navigating Nigeria's regulatory environment can be tough, and businesses may struggle to adapt without their founder's expertise and goodwill.
Conclusion: Business owners who crave continuity must study why family owned businesses survive and try and avoid the pitfalls that could inhibit it. If you know you do not have those that can run the business well after you, it is advisable to outsource the management to a reliable company.
Also, investment in talents can help sustainability.

YOUR OFFICE IS NOT A DATING SITE
I’m not saying you can’t find love at work I’ve seen it happen beautifully.
What I am saying is: be intentional.....Don’t expose yourself unnecessarily.
Don’t increase your body count within a small office, remember, it’s not that big, and reputations travel faster than emails.
Beyond romance, let’s talk friendships too.
Sometimes, the emotional pain people experience at work doesn’t come from relationships gone wrong… it comes from friendships that were never clearly defined.
You thought you were friends.
You thought you had each other’s back.
But it was all in your mind.
No clarity. No communication.
Just silent assumptions.
And when expectations clash, what’s left?
Strife. Gossip. Awkward tension in the workspace.
So whether it’s love or friendship in the office, here are a few tips:
- Keep conversations clear define what you both are.
- Protect your peace and your reputation.
- Set emotional boundaries early.
- Don’t mix up professional loyalty with personal attachment.
Above all, remember: you came to work to grow, not to bleed emotionally.
Protect your workspace. Protect your energy.
It’s hard to thrive in an environment clouded with emotional residue.
Keep growing and keep your heart and career safe.

My suggestion is that if you have the means of correcting any misappropriation you have, do go ahead and do it for your self confidence sake.
Don't mind motigbesional speakers. I have a question for them too.

ReplyDeleteYou go think some of our northern brothers don't know what they're doing. leave these guys, they don't want insecurity to end. They're aware of this obvious fact.
I've been praying and hoping God use another external force to help rescue us.
They're trying to change the narrative that the US are coming for our oil, oil nonsense that has not benefitted any citizens. How many of us dey benefit from the so call oil?
I'm happy that the cry of the poor masses superseded that of a useless CAN body that couldn't speak out for her people.
The needless and senseless killing needs to stop ASAP. Nigeria needs to be great again ππ
From I and my entire family we are donating some Benue tubers of yams to welcome Divian Trump Yoo and USA military π
During my days of touring Badagry buying seafoods, I learned how to cook fisherman soup, they have seafood in abundance so most of their dishes is filled with it.
ReplyDeleteEating rice every time and still eat it in Christmas can be boring, if God provides I'll be making fisherman soup and pounded yam
Ingredients:
For the Soup
1 catfish
1 cup periwinkle
1 cup fresh those big crayfish
3 pcs of snail
4 pcs of crabs. I love crabs π
1 cup dry fish or stockfish (pre-soaked and deboned)
few pieces of okra
3 tablespoons palm oil
1 tablespoon ground crayfish
2 seasoning cubes (Maggi/Knorr)
1 tablespoon pepper mix (blended scotch bonnet + bell pepper)
1 teaspoon ground Cameroon pepper (optional for heat)
Prepare Seafood:
Wash all seafood (fish, snails, crab, big crayfish ( fresh), periwinkles thoroughly with lime and salt to remove slime and dirt.
In a pot addsnail, stockfish, and crab.
Season with salt, seasoning cubes, pepper mix, and a bit of crayfish.
Add 1 cup of water and cook for 10 minute ,then add catfish and prawns to the boiling pot.
Pour in the palm oil and stir gently to avoid breaking the fish, cook on low heat for another 10 minute, you can add more crayfish, the remaining pepper and adjust seasoning.
Finally, add the chopped okra or any other vegetables of your choice,I prefer okra
Stir gently and allow to cook for 3–5 minutes.
Turn off heat and let the flavors blend as it cools slightly.
For Pounded Yam

I am here to learn
I read SP few minutes ago and saw the rant of the young man who's not happy about being single while his younger brother is getting married.
ReplyDeleteYoung man, you don't need to be sad. Rejoice with your brother. He's no cause of your situation. You don't expect him to wait for you. Life doesn't wait for anyone. Pray for God to bless and uplift you so your finance will increase. 70k is too little to start a family but then, if you're lucky to have a woman who's working and understanding, you both can settle down while you keep hoping for a better tomorrow.
My elder brother married with three kids. My younger brother also got married with two kids. If you see how I play with the kids, you'll understand how happy I am towards them.
So pls cheer up and be happy. Pray for increase and also a good woman that will understand you very well.

ReplyDeleteIs there a reason why online cooks would rather cook with a frying pan instead of a pot that would contain what they are cooking. I hate food spilling on my gas reason I don't understand how they handle this.
ReplyDeleteThis, I have never understood. I’m constantly buying bigger pots because I have the stress small pots give me when I’m trying to stir but u see them actively using small pots for large qty of food. I honestly don’t understand it
DeleteVery Annoying.
DeleteSee Thier Frying Pan full/ I wonder how it Boils properly without Spilling over
They said it's for the aesthetics. I nearly crase the day I used frying pan for fried rice. Never again
DeleteI had to go buy those deep fry pans, (dunno if that’s what is called saucepan) for my fried rice. I was tired of the mess.
DeleteIt's called wok @ Eka
DeleteThey don't have fancy deep pots. The frying pans are fanciful that's why they use those. The big rich online food content creators that can afford expensive and quality cooking utensils don't use frying pans or small pots for plenty food. ReplyDeleteCHICKEN STEW
ReplyDeleteheat some olive oil in a pan and add the chicken one at a time. I like to use a wide skillet for this so I can do everything at the same time. Brown the chicken on each side for about 10 minutes. When the chicken is done, take it out and leave it in a bowl.
Blend the tomatoes, red bell pepper, habanero pepper, and the unchopped half of the onion. If possible, do this without adding water or adding just a little so the flavors are more potent. Add the chopped onions to the olive oil and sautΓ© until translucent.
Pour in the blended tomato and pepper mix and cook for about 5 minutes.
Add the chicken thighs, chicken stock (broth), bouillon, curry, black pepper, and thyme, and bring to a boil. Taste for salt and add more if necessary. Simmer for about 20 minutes or until the chicken is done.
You and I know that this is not your "handwriting". Wehdone sir

Nice day everyone
Good afternoon.
ReplyDeleteHello All,
ReplyDeleteStellz let me prepare Fried rice wey dey burst brain for you. Lol π.
I cook Fried rice and Jollof so well. Fr. No jokes. I remember when my friend asked me to help her cook Jollof for her birthday. It was delicious π.
I will parboil my rice for like 8/10 mins
Then rinse in cold water.
I will quickly proceed to Boil my Beef and Liver with Maggi, onion, blended garlic and ginger, thyme, curry and a little salt.
Okayy, so when the Beef is done, I take the meat from the stock. Then I fry my meat in oil. I love frying my beef till it becomes crispy sort of. I will fry the liver too but not as crisp as the beef. That being done, I proceed to make the rice.
I will sieve the stock, then cook the parboiled rice inside the sieved stock. But before putting the rice in the stock, I would have added curry, thyme, Maggi and salt in reasonable quantities. I bring it down when it's done. The rice must have been cooked on low heat, abeg. So it come out dryyyy.
I have my diced Green pepper, diced yellow pepper, diced atarodo like half of the others. Then the fried liver must be diced too.
Then in my vegetable oil, I'll put in the onions first then after one minute, I will add the diced vegetables that's the pepper, liver et al. Then fry for like 2 / 3 mins. So, I'll add the rice scoop by scoop inside the pot then mix them nicely. I'll stir for like 5/10 mins on veryyy low heat. My Fried rice is ready o.
Extra: I may sauce my fried beef in pepper sauce. But I don't like this. I like eating my crispy fried meat like that.
When I made this for my sister one time, swears she forgot malaria sharp sharp.
I forgot, Green beans, Green peas and sweet corn should be added to the veggies.

Spoilt soups will normally happen in these scenarios
ReplyDelete1. When you use ugu, scent or uziza leaves to cook your soups and you can't refrigerate it....If you don't have any means to freeze your food, use fresh washed bitter leaf..Your soup will last....
2 If your kitchen is always hot, it has a way of accelerating food spoilage. Food spoils faster during hot season than dry season
3. When you don't warm your food properly or after warming your food, instead of opening your pot ajar to cool off....You keep the lid closed after cooking makes you food get spoilt
Easy ingredients to salvage spoilt soups: Palm Oil, Onions, little seasoning or small bitter leaves....
Good afternoon everyone

How I Cooked It
I started by blending my tomatoes, tatashe, atarodo, and one onion till smooth.
I parboiled my rice for about 10 minutes, rinsed it, and set it aside.
I washed and seasoned the chicken with onions, curry, thyme, seasoning cubes, and salt. I boiled it till soft, then fried it to get that nice golden color....
In a clean pot, I heated some vegetable oil, added onions, tomato paste, and fried for a few minutes. Then I poured in my blended pepper mix and fried it till it thickened and the oil came up.
I added my seasoning, salt, and chicken stock, then mixed in the rice. I covered it tightly so it could steam and bring out that party jollof taste.
While the rice was cooking, I made my salad with sliced cabbage, carrots, and baked beans, then mixed in mayonnaise.
I served everything hot with the fried chicken and a chilled drinks but this year go serve small beer join lol
I picked jollof rice because it’s a favorite at every Nigerian celebration.
It’s colorful, delicious, and simple to prepare.
The combination of jollof rice, fried chicken, and salad always makes Christmas feel special and homely....
Make i read others recipes if it's not difficult I will try them..
