Breakfast Post On Saturday.....

Is Jollof rice OK for Breakfast?Not too heavy?

I would rather do Jollof rice for Lunch but i can do Eba and Okro soup for breakfast...LOL



 

Did you change your eating routine and what you eat?or is it the same old?

Who can cook Jollof rice as red as this?Choi,i am still learning!...lol

  1. If you want your jollof rice as red as this, add plenty bell pepper to the small tomatoes you will blend for the jollof rice.

    2. Anon, you be correct cook. We know ourselves 😁, I was just about writing use sombo, using alot of tomato paste won't achieve this and it might even be sour. Use as little tomato paste or fresh tomatoes as possible. Sombo and bell peppers are the real secret.

  2. Never eaten swallow as breakfast in my entire life. It doesnt just go with my system in d morning. Jollof is still okay,though i prefer bread or yam.

  4. Stella, Red bell peppers is what gives the jollof rice that rich red colour.
    Making noodles for breakfast, without the seasoning ofcourse! I love my heart.

  5. Yes stella, my is as red as this just make sure your tomato base is combined with tatashe and shombo along with pepper. Firstly fry tomato paste for few minutes then add your tomato mix,let it fry well till oil separates from the tomato. Add your seasonings and fry for few minutes then add your stock,water and allow it to boil before adding your parboiled rice or properly washed rice with hot water. Stir and cover the pot with foil and lid. The foil is optional but helps to give the a unique party taste. When it's done,enjoy your rice. Note you can add margarine to it and cook for some time before serving. The redness depends on the amount of tomatoes both paste and mixed .

  8. I can't stand heavy food in the morning... I'm even more of a brunch person than breakfast.

    Ginger tumeric tea 🍡 with honey this late morning

    Its raining heavily and chilly too.

    Chicken carrots with celery soup 🍲 will be the best for this weather

  10. Alongside enough tatashe, to get ur rice that red, add derica tin tomatoes. That Derica totally made a huge difference to my jollof rice
