Food Storage Tips.....

Do you know different ways to store food that might easily go bad if not eaten?there are so many tips and you input would be greatly appreciated...


I hear tomatoes last longer if you remove the stem and store upside down!

    1. To prevent your unripe plantain from ripening, tie the stem with a polythene, this way it can stay for about two weeks before ripening.
      Another way is to put them in and container filled with water, cover it and use when you wish to. It can also last about two weeks as it ripens gradually than the normal way it would.

    6. I used to do the yam one because Yam spoils a lot in the part of the country I am and African store is far away from me but the yam doesn't taste the same when cooked so I stopped it.
      Beans remains good when frozen and with tomato you can buy canned chopped or plum tomato 🥫

    7. You’re right, the yams will never taste the same or have the same texture once you cut them and them in the fridge/freezer, same with sweet potatoes, I tried it once and regretted it

    9. It would go dark if you don't place the yam strategically in the freezer. Make sure that it is placed at the bottom part of the freezer where it is coldest. And do this right immediately you peel and wash d yam. Remember to suck the air from the nylon before freezing as this would ensure that it does not stick together when frozen.

    1. If you have no freezer, and have weevil-infested grains already, place a big empty pot on fire and pour the beans for instance. Allow to heat, stir as you like to prevent frying.

      If they aren't already infested, store with dry pepper in airtight containers. Healthier than chemicals

    2. You can also put dogoyaro leaves in your container of beans and kiss weevils goodbye. Just remove leaves before washing.

  3. This yam tips will only work where their is steady electricity supply. I need to know how to preserve my sweet potatoes too.the ones I got last week are all spoilt as of yesterday.

    2. For sweet potatoes and Irish potatoes, just pour it inside a bagco bag. make sure it's the black bagco bag they sell N100. That's all you need. I keep the bags on a shelf outside my kitchen, by the hallway where there's no direct sunlight.Rhe potatoes will stay up to 3weeks.

  4. For cut vegetables, put in a paper preferably old newspapers and then tie in a nylon then store in the freezer. For banana leaves i.e ewe moi moi just tie in a big nylon and store in the freezer. Plantain best stored in the refrigerator

    1. I know glass container preserve stuff better than plastic container. I do put dried
      pepper in plastic and it goes bad within a short period till someone told me glass is better. So far, so good!

    2. I store my cut ugu, water leaf and others in the freezer. I cut them, wash them and store till I’m ready to use. It can stay for 2 weeks and the taste does not change.

  5. Pretty cool tip but this would work for places that enjoy constant power supply. I kept my eggs in the fridge and they are still fresh..

    A friend of mine told me to keep my ripe plantain inside a bucket of water to retain its freshness. I tried it but when I was ready to use them, they were soggy.

    1. If you have constant light, store your beans in an air-tight container or bucket and put in your freezer. It can last for months.
      Weevils will not infest it, and if there are any, they will die-off.

    2. Beans should be stored in an air tight container or ziplock bag and kept in the freezer. Ripe plantain should be stored in the same manner. Just slice in your desired shapes and freeze. They would last as long as they stay frozen. Ensure to fry straight from the freezer, do not defrost otherwise the plantains would soak up the oil.

    3. Put dry pepper (ata gbigbe) spray and embed it in the beans. Or jumble it with the beans for sure circulation. It distances the weevils.

    4. You need a black plastic jerrycan with an inner airtight white plastic lid(not colored one to keep daylight away).

      Buy and blend fresh cameroun pepper(not the one they already made),blend it yourself for potency.

      Pour half cup inside,cover and shake to touch every part.
      Using a funnel pour beans(without weevils),pour more pepper when you get halfway then pour the rest on top when through.

      Cover tightly,store in the dark and away from heat.

  6. I'm interested in how best to store tomatoes.

    Our refrigerator spoilt and we now buy tomatoes on weekly basis.

    We store our grains(beans, okpa and maize ) in air tight gallons and drums and they last for about one year.

    1. For the tomatoes; grind and boil to dry, allow it to cool, put in a plastic container, pour fresh groundnut oil inside, use your soup spoon and make hole so that the groundnut oil will get deep down the container. It can last in or outside the freezer, fridge.

    2. Blend the tomatoes and boil to dry. If you don't have freezer you can use empty mayonnaise bottles, after feeling it with the tomatoes put water in a pot and boil then put your bottle tomatoes inside for like 10 minutes bring it down allow to cool then keep on your kitchen shelves.

    4. Faithful dear...pls, is only a breakable bottle( mayonnaise bottle) that could be used for boiling and storing the tomatoes. Can a plastic but airtight container be used? Thank you.

    5. Mhiz A, never cook or warm food in plastic containers. The heat will cause the plastic to degrade and leach cancerous chemicals into your food.

  10. For yam and some other tuber,if you can't use a fridge due to some other issues like power supply etc;then dig a big hole in your compound(if it isn't interlock) and bury the yam inside,then close..

    Whenever you dig it up again;it's still fresh..

    For rice;get a 25 liter rub and pour it gradually inside with a funnel;then close it to be air tight(you can use nylon on the cover)..that way nothing survives inside..

    Use same pattern for beans;add all these long dry pepper in this case..

    For fresh pepper;dry it up under the sun,then get it grounded later..

    Will type more as I remember..

  12. Store in a refrigerator, if you don't have a fridge or freezer, warm your food every morning and night and anytime you want to eat.

    Grind or blend your pepper 🌶 and tomatoes 🍅 and do as I said up there 👆

    I personally don't like storing my food, especially soup in a freezer because it becomes watery and lost it taste, I even feel like vomiting sometimes.

    I'd rather leave it in the pot, keep it in the kitchen and warm before eating.

    This our freezer too dey freeze things and he dey burst pure water and break bottles like no man's business.

  14. I use air tight containers to store rice, beans, garri, grounded crayfish.
    As for yam I store in a cool space.
    I only store already cooked foods in freezer and also meat. But I don't like it stay more than a week in the freezer, cos the thirst may not be the same

  16. You can also store plantain same way with yam in the freezer.

    After slicing the plantain, flatten everything in a ziploc and store in the freezer.

    3. Also for crayfish try to sieve it and afterwards sprinkle salt on it and dry under the sun for like two days. After this, put the crayfish in an air tight container or gallon. This crayfish will stay for months if not a year without getting spoilt.

  20. Blend your tomatoes, boil them with little oil and salt, store in the freezer in storage bag.

    Peel your yams, dice and store them in the freezer

    Always use cling film to wrap or cover your leftover food, fruits etc., instead of aluminium foil paper.

    A leftover tomatoes paste should be removed from its can, put in a storage bag, add oil to it Nd store in the fridge or freezer

    Don't dip your bare hands inside a bowl of salad, not even while mixing it... Don't add fresh onions to your salad if you would like to eat it the next day, you might easily get food poisoning.

    You can slice and dry your surplus fruits in the oven and when dried, you can store them in a food storage bag/can

    Add a little salt to all your blended dried food items, like Egusi, ogbono, crayfish etc.

    Store your slice bread in the fridge.

    You can dry your fish and meat with salt in the oven and store them in the freezer.

    You can boil your meats and dry them with a little more salt in oven and then store them. Meanwhile, you can store your meat sauce in a storage bag and store them in freezer.

    Extra: do you know that meat sauce are sold at the supermarket in most Western countries?!

    1.Cocoyam
    Wash the raw cocoyam,boil for 2hrs,peel skin and put out under sun(during harmattan is better)to dry up. Then blend and store in dry 'glass bottles' not plastic and keep up the shelf.
    Sprinkle on onugbu or oha while soup cooking.
    Storage can last a year once you open bittle,pour and lock lid immediately.


    2.Fresh tomatoes,tatashe and pepper.
    (The Jos Quality red ration I use:
    a paint bucket of tomatoes
    a paint bucket of tatashe
    1/2 of a paint bucket of fresh pepper).Theirs gives you pure red Derica paste.

    Wash,deseed only tatashe,blend to paste.Pour in glass jars(empty bread jar cup,honey jar or mayonnaise jar).
    Cover tightly, pour 2cups of water in a cooking pot,place jars inside pot,none touching each other and boil for 30mins.
    Allow to cool off inside pot, do not open lid,then place in a dark corner of a cool shelf.Once heat touches it,it goes sour so jeep far from cooking corner and once you open a jar,you must use the entire content that minute.'NO PLASTICS PLEASE'
    NO LEFT OVER of any jar.


    3.Cassava
    Deskin and wash raw cassava 3times till water is clear then soak in a basin the same way you soak corn for pap.
    Every 7am,remove whole water carefully for 3 days until it ferments like corn,then using plastic sieve and laddle,scoop unto sieve,do not use your bare hands to sort chaff from cassava paste,pour away the settled water after 15mins and pour thick white paste into a cotton bag,place on a flat board and allow the clear water to sip away.After 6hrs, pour dry crispy cassava into a nylon sack(I use the longer thicker size of those used by pure water packaging companies.)
    Then drop in a long sack before putting in the freezer.
    Make the dry white odorless cassava like semovita in boiling hot water,if you want colour,mix with dry nni oka(corn flour)at a ratio of 2cassava cups to 1cup of corn,if you are Igbo,it leaves a particular sweet aroma.

    'PLEASE REMEMBER AFTER MAKING TO COVER ON FIRE,ADD WATER TO THE SIDES AND BOIL FOR 30MINUTE BEFORE TURNING'
    You get a clear odourless mould of fufu.

    If you don't have freezer,pour in a clean plastic bucket,seal up the sides and pour 3cups of water on top,then sprinkle ONE FULL CUP OF SALT ON THE WATER.DO NOT TOUCH.

      The other day, I got prepacked cocoyam flour at the grocery shop. My elder sis didn't use it to cook onugbu soup yesterday rather she boiled the cocoyam tubers and blended.

    2. I empty mine in plastic bucket with cover and store in the freezer. Same way,crayfish, egusi,ogbono,smoked fish.Always fresh when you decide to use.

    3. Check the date of expiry before buying. Semovita lasts for six months after the day of production. That is the reason for most of the worms. It happens when it is getting towards that time.

  26. Yams can last for quite some time say about a month after purchase. When keeping yams in the house:
    1. Keep it upright and not lying on the floor.
    2. Don't keep yams on the bare floor, you may place a plank on the and keep the yams on it, remember only upright.

  27. You can store bread in the freezer. Whenever u are ready to use it, put it in the fridge the night before and by morning it will be as fresh as can be. Or u can microwave the slices u want for 2 mins straight from the freezer. I’ve been doing it since this lockdown and it’s great. My kids don’t even notice it’s been in the freezer.

  29. A bit long read...
    For dried fish,I wash and de-bone,sprinkle just a little bit of salt and then freeze. It lasts over six months.
    For fresh tomatoes,rodo or tatase, I wash and then store in ziploc bags and then freeze,you just take out the quantity you need few hours before using. It can get a bit soggy if left to defrost for a long time,but it does not matter to me cos I would still need to add water to blend if fresh anyway.
    I wash beans in bulk for moimoi or akara. After washing i drain excess water and then freeze. It keeps well and can last up to 6 months or more. It makes it easier for me to quickly make these meals.
    I wash and add seasonings to beef/chicken etc before storing them in different ziploc bags in the freezer,just make sure you label the bags because you would add seasonings according to what you need the meat for...aside from the fact that it makes cooking easier,meats tastes better when seasoned for longer period.
    I make pizza dough and store too,even pizza sauce to go with it. I also buy fruits and veggies quite cheap at a farmers' market nearby,then I chop them and store too after taking out air from the ziploc bags,it is important to suck the air out so as to keep it fresh.
    To make my ginger/garlix paste,I blend both and then pour into freezer prove bottles and just store them in the fridge.
    But like most BVs rightly said,you need constant light for this.
